One bowl. No blending, chopping or melting. Just 5 ingredients and within 5 minutes you’ve made a nutrient-dense & protein-rich banana bread, that’s actually health. Yup, it’s free of refined sugar, dairy, gluten and soy. It really is that easy (and tasty).
Most of us don’t eat enough high quality protein and fat . As soon as we increase good quality protein and fat sources (especially in the first half of the day), I often see patients reaping the benefits, including stabilising blood sugar levels, regulating energy levels, improved mood management, which can result in less anxiety and irritability, healthy hormones, and healthy weight management. My hot tip is to focus on protein with ever meal and snack. This recipe is an easy one to make on a Sunday to set yourself up with a protein-rich and nourishing snack for the week, to take to the playground or to eat on the run.
200 grams almond meal
4 bananas, mashed
5 TBSP honey, maple syrup or rice malt syrup
2 tsp baking powder
+ Optional - 2 drops doTERRA Cinnamon essential oil. This addition is amazing for a chia tasting twist. If you don’t have it, add in 1 tsp ground cinnamon. Cinnamon essential oil supports a healthy metabolism so I’m a massive fan of adding it to tea, hot choc, smoothies, cakes etc. anywhere I can! More info on oils here
+ Optional - throw on a teaspoon or two of sunflower seeds or pumpkin seeds on top of your banana bread for a little pizzazz
Preheat oven to 160 degrees celsius
Line a bread tin with baking paper
Add all ingredients (except the seeds) to a bowl and stir until combined
Pour bread mixture into your bread tin
Sprinkle seeds on top
Bake for 40-50 minutes
Side note: I love this served with a slab of butter, otherwise you can serve it with Greek yoghurt or for a dairy-free option, serve it with coconut yoghurt
